Waitati was named after the North Otago town where the previous owner's family settled in 1856. Primarily a florist's picking garden, Waitati was created in 1994 from a cow paddock, and has been landscaped to take advantage of the slopes and contours. Native trees and indigenous orchids were incorporated into the garden, and more recently many vireyas.

Prolific flowering plants at Waitati include campanulas, delphiniums and the species bulbs. A wide variety of flowers has been planted, colour grouped both for visual effect and for picking. A blue and green area featuring delphiniums and a scented garden, with a seat in it for relaxing and enjoying the perfumes, includes daphnes and a lot of old scented varieties, which are popular with groups of older visitors.

Two ponds on different levels run into each other, planted with rocky alpines below, including meconopsis. Spring bulbs and blossom include the magnolias up the driveway. Then the roses emerge, climbing over structures, underplanted with phlox, romneyas, aquilegias, foxgloves and other perennials. Annuals such as zinnias are popular for picking. There is lots of autumn colour when the leucadendrons, proteas and isopogons flower, followed by the camellias and winter-flowering clematis.
